These muffins may be the easiest thing you make this year. They are perfect for brunch with friends, Sunday breakfast, or a before-work snack. And let’s be honest – they’re pretty!
All you need is:
• 12 pieces of bacon
• 12 frozen biscuits (thawed)
• 12 eggs
• salt & pepper to taste
To start, preheat the oven to 375 F. Grease a medium sized muffin tin and press a thawed biscuit into the bottom of each cup.
Tip: spray the top of the pan as well. Some of the egg whites may sit on the rim of the cup. Spraying the top will help stop tearing and allow for easy removal!
Bake the biscuits for about 10 minutes – or half of the suggested bake time.
After the biscuits have been in the oven for about 10 minutes take them out of the oven and start carefully cracking an egg on top of each biscuit. Salt and pepper to taste. Carefully put the muffin tin back in the oven and bake for the remaining time – about 10 more minutes.
I like my eggs a little runny. Adjust the take-out time if you like yours more firm!
While the biscuits are baking, cook the bacon.

Before the bacon cools, curl each piece. Be careful, the bacon will be hot!
Once the biscuits are done pull them out and place a bacon curl on each muffin. Let them cool for about 10 more minutes.
