Chicken Noodle Soup

Nothing says “I care about you” like a big bowl of chicken noodle soup. It’s hearty , comforting, and seems to make even the worst cold subside for a few minutes.

The best part is, it’s easy to make!

What You Need:

For the Soup
4 celery stalks
8 oz baby carrots
1 small white onion
3 cloves garlic
8 oz shredded rotisserie chicken
8 oz egg noodles
32 oz reduced sodium chicken broth (You can use regular chicken broth, but watch how much salt you add!)
16 oz water
1 tbsp oregano
1 tbsp basil
1 tsp salt
1 tsp pepper

 

What To Do:

Boil noodles in a separate pot until al dente. Chop celery, carrots, and onion into bite sized pieces and add to a stock pot. Mince garlic and add to the pot. Add shredded chicken, chicken broth, water, spices, and noodles to the pot. Stir.

Bring the soup to a boil. Let it simmer for 30 – 40 minutes.

Add more salt and pepper as needed.

Make this a vegetarian soup by using vegetable broth and omitting the chicken!
