I threw this breakfast scramble together one Saturday morning. A group of friends & I had been celebrating a birthday until the wee hours of the morning and I needed something to help kick-start my day! Enter protein and veggies!
What You Need:
1/4 cup whipping cream (replace with milk or milk substitute)
1 small tomato
1 small onion
1 cup chopped spinach
Bacon – 4 slices, cooked
What To Do:
Preheat the oven to 400° F. Grease a glass, 9in x 9in pan.
Chop the tomato, onion, spinach, and cooked bacon.
In a separate bowl, whisk the eggs, milk, salt, and pepper.
Add eggs and chopped ingredients to the greased pan. Stir the mixture so it’s evenly distributed throughout the pan.
Bake for 50 minutes to an hour – or until the egg is cooked through.
