Sometimes, when you put some of your favorite things together, you end up with something delicious. I’m a fan of bread … I mean who isn’t? So when you pile ricotta, avocado, tomatoes, and garlic on top of a beautifully toasted piece of bread, I’m going to be one happy girl.

What You Need:
1 Loaf of Italian bread
Olive oil
Garlic cloves
10 oz Cherry tomatoes – red and yellow
1 Avocado
Fresh basil, julienned
1 1/2 cups Ricotta cheese
Salt
Pepper
Garlic powder
What To Do:
Preheat oven to 425°F.
Slice loaf to your desired thickness. I prefer 1 inch slices. Cut your garlic cloves in half and set aside.
Lay bread slices on a sheet pan and drizzle with olive oil. Bake the bread for about 8 to 10 minutes. Note that thinner slices will need less time to toast!
While your bread is toasting, halve the cherry tomatoes and dice the avocado. In a separate bowl, mix the ricotta with the salt, pepper, and garlic powder. Use to taste.
Once out of the oven, rub the cut end of the garlic cloves over the face of the sliced bread. Arrange the on a serving platter.
Spoon a dollop of ricotta on each piece. Add tomatoes and avocado. Finish with basil.
